The cuisine of Monemvasia, Vatika and Zarakas is distinguished by the simplicity in which the dishes are prepared in order to highlight the natural goodness of the ingredients.

Locals have become used to the freshest products and avoid heavy sauces that mask the natural aromas of vegetables, meat and seafood.

So the recipes are simple, easy to follow, healthy and above all, delicious!

GOGLES (home-made pasta)

Ingredients (for 4)

1 kilo all-purpose flour

1/2 litre of water

to serve :

grated cheese

butter

 

Put the flour in a deep mixing bowl and add the water gradually, kneading to form a firm dough.

Divide them into equal portions to form long macaroni strips.

Cut these into smaller sections and shape with your fingers to form a shell.

Place immediately into boiling water and boil for about 20 minutes.

Serve with grated cheese and cheese that has been browned in butter.

Almond sweets

ALMOND SWEETS of Monemvasia

You will need:

1.200gr almonds,
360gr icing sugar,
5 egg whites,
50-60gr fine semolina,
vanilla extract, rose water,
cloves,
icing sugar for topping
Instructions:

Boil, peel, dry and grind the almonds.

Mix the sugar, the vanilla extract,the semolina and the beaten egg whites well with the almonds and make small pear shapes with the mixture. Put one clove on top of each sweet and bake in the oven for 15 minutes.

When the sweets are cold, dip them into the rose water and then coat them in icing sugar.
