You will need:

1 ½ kg Vatika onions
1-2 finely chopped tomatoes
self-raising flour
herbs such as dill or fennel or basil
olive oil for frying

 

Instructions:

Slice 2/3 of the onions in rounds and fry them in plenty of olive oil over a low heat. Essentially they are boiled the oil unti well softened. Transfer to a colander to drain, then chop roughly on a chopping board.

Grate the remaining 1/3 of the onions or chop finely in a food processor.
In a large bowl, place the friend onions, tomatoes and flour, mixing well and adding enough beer to make a batter.

Add salt and pepper, herbs and mix well.  If desired, add a little grated kefalotyri cheese to the batter.

Heat olive oil in a frying pan until quite hot and place spoonfuls of the batter into the hot oil, frying on both sides. Transfer to absorbent paper to drain before serving.
